In passing by the TV I caught a portion of the Dr. Oz show when Jorge is demonstrating his high-energy, 5 minute muffin.  Who could resist a healthy, nutritious breakfast to boost your energy in 5 short minutes?  Here’s the recipe:  1/4 cup ground flax, 1 tsp. baking power, 2 tsps. cinnamon, 1 tsp. coconut oil, 1 pkg. stevia, and 1 egg.  Mix all the ingredients in a coffee mug and nuke in microwave for 50 seconds.  After cooling, the muffin is supposed to drop on the plate. (As seen on TV). I religiously read the recipe, scanning the ingredients.  Had to go to the health food store for the flax, coconut oil, and stevia.  Nothing that “healthy” on hand.  I realized that I need a “TV Prep Person” to put all the little ingredients in those cute little bowls all the while realizing  that I didn’t have Baking Powder but Baking Soda….With a little guilt for the substitution, I proceeded.  Joe and I watched as the muffins filled the mugs wondering if I should have used PAM spray to get them out.  Joe got out the spoons, just in case.  But “Glory Be” those muffins fell on the plates as promised.  I would suggest mixing the dry ingredients first and then adding the egg.  I bit into an unmixed glob of baking soda…ugh.  I want to try the recipe again using the correct ingredients and my new mixing method.  As for the taste, Joe remarked “I’ve had bran muffins that tasted worse than this.”  I’ll take that as a compliment!
